Jewish Meals

STUFFED DUTCH MONKEYS
DOUGH:

q/,4 lb. butter (1% sticks)
1 cup light brown sugar (tightly
packed)
pinch of salt
teasp. cinnamon
1 egg
2 cups flour
Cream butter, sugar, salt and cinna-
mon. When well creamed, add egg and
2 cups flour. Make a dough and refrig-
erate 2 hours. In the meantime, make
the filling.
FILLING:
y, lb. finely chopped citron
; lb. ground walnuts
114 teaspoon' butter
1 ,?,. teaspoon vanilla -

Mix together. Divide dough in half,
roll half on a well-floured board about
9!,f! x 9 1,4. Place in a 9-inch square pan,
lightly buttered and spread filling over
it. Cover with second half rolled out
as above. Prick well and bake in a
375 degree oven about 30 minutes. Cool
in pan. When cool, cut into squares.
BOHEMIAN COOKIES
1 „4 lb. butter
cup sugar
grated lemon rind
juice of half a lemon
214 cups flour
2 hard boiled egg yolks
2 eggs
1 tablespoon brandy
Put hard boiled yolks through a sieve.
Cream butter and sugar well, add hard-
boiled egg yolks, acid rest of ingredi-
ents and mix well. Roll 144 inch thick
and cut with cookie form. Bake in
lightly greased pan in 375 degree oven
about 15 minutes.
