It ranks morality and social justice with religious precepts. It entails a daily discipline on many levels. Yet Judaism insists on regarding it as a priceless gift, given and received with love. That is why devout men spend the entire Shavuos night in prayer and study. For the Torah is likened to a bride and the House of Israel to a bridegroom. With ardor and with joy, the groom prepares for the wedding .. . " Nd what does mother prepare for Shavuos? Dairy delicacies of many kinds. So here are two new ideas: FESTIVE APPLE-CHEESE FRITTERS 3/4 cup unsifted flour • 11/2 tsps. sugar 1/2 tsp. baking soda • 1/4 tsp. salt 1/4 teaspoon ground cinnamon 1 cup pot cheese • I cup shredded apple 1/2 cup dairy sour cream • 2 eggs Planters Oil • Confectioners' sugar Thoroughly combine flour, sugar, baking soda, salt and cinnamon; set aside. Mix together pot cheese, apple and sour cream. Beat eggs until thick and lemon colored; fold into cheese mixture, then fold in dry ingredients. Heat about 1/4 to 1/4-inch depth of Planters Oil in large heavy skillet. For each fritter, drop about 2 level tablespoon- fuls of cheese mixture into hot oil. Fry on each side until solder .brown. Add Planters Oil to skillet as needed to keep proper depth for frying. Drain fritters on paper towels. Serve bot'sprinkled with confec- tioners' sugar. Makes about 18 fritters. FRESH BANANA MUFFINS 2 cups unsifted flour • 1/2 cup sugar 3 taps. baking powder • 1 tsp. salt 2 eggs, beaten • 3/4 cup milk 3 ,41 cup (1 large) ripe mashed. banana 3 tablespoons Planters Oil 1 tbsp. finely chopped Planters Pecans In large bowl sift together flour, sugar, baking powder, salt. In another bowl blend eggs, milk, mashed banana and Planters Oil. Stir the liquid mixture quickly into the -dry ingredients. Stir just enough to moisten mixture. Batter will be lumpy. Fill greased minim cups about half full. Sprinkle each muffin with about % teaspoon iinelycbopped Planters Pecans. Bake at 425° F. 15 to 20 Wanes. Serve warm. Makes a dozen.
