correctly, many of them now feel
themselves confident to try baking
something more ambitious. I have
therefore chosen for this column
a cheese cake made with cottage
cheese. Of the many varieties of
cheesecake this is one of the
simplest to prepare and should
take only about 45 minutes to
finish.
A great favorite with my family
and friends is Hazel Nut Torte
to finish off a good dinner.

1 tablespoon butter

1 tablespoon sugar
1 egg
1 tablespoon milk
1 cup flour
1 teaspoon baking powder
Mix dough using ingredients in order
and spread evenly over bottom of 10
inch spring form.
Filling:
6 eggs (separated)
1 cup sugar
1 teaspoon vanilla
Grated rind of one lemon
2 lbs. cottage cheese
1/2 pt. sweet cream
3 tablespoons top milk
3 tablespoons flour
Beat egg yolks until lemon colored,
add sugar gradually while beating yolks
until mixture forms ribbons when beater
lifted, add vanilla and lemon rind to
mixture. Strain cheese through a sieve
and add to egg mixture. Whip cream
and add to mixture and fold in well.
HARVARD ROW
Beat egg whites stiff and fold into mix-
ture. At the end add milk and flour.
Pour into form and bake 45 minutes in
350 degree oven.
HAZEL NUT TORTE
8 eggs, separated
1 cup orange juice
1 teaspoon vanilla
1 tablespoon rum flavor
11/2 cups sugar
1/2 lb. ground hazelnuts
4 tablespoons breadcrumbs
1 teaspoon baking powder
Beat egg yolks with sugar until thick
and lemon colored, add vanilla, orange
juice and rum flavoring and continue
beating a few minutes. Add nuts mixed
with breadcrumbs and baking powder.
Beat egg whites stiff but not dry and
fold into mixture. Bake 45 minutes in
a 9 inch spring form which has been
buttered and floured, and flour excess
removed in 350 degree oven.
