Saute onion and garlic in oil until onion
is translucent, stir in tomato sauce and
1 teaspoon of lemon juice. Heat to boil-
ing, stirring often. Place 1/2 of the
noodles in a casserole, cover with half
each of tomato mixture, cottage cheese
mixture, tuna mixture, repeat and put
noodles on top. Place sliced American
cheese over entire top and parmesan,
if used, on top of that. Put casserole
in a 350 degree oven for about 40
minutes.
Tomato Sauce
l'. cups of Italian style tomatoes
1 small can of tomato paste
2 tablespoons of olive or vegetable oil
1 large onion, chopped
2 cloves of garlic, chopped
1 bay leaf
teaspoon of salt
1 /4 teaspoon of pepper
1 /4 teaspoon of oregano
Saute onion and garlic in oil until
onions are translucent. Add tomatoes
tomato paste, bay leaf, salt and pepper.
Simmer uncovered. stirring occasionally
for about 2 hours. Add a little water if
too thick. Add oregano and continue
cooking about 10 minutes.
