For these bleak winter days
there is a heartwarming treat in
store for your family—hot nourish-
ing barley and bean soup followed
by broiled chicken; both simple to
prepare and highly rewarding.

Barley and Bean Soup
2 lbs. plate flank or any other
meat bones
3t quarts of water
1 large onion
3 cloves (whole)
1 bay leaf
small clove of garlic
2 teaspoons salt
2 cups dried lima beans
3/8 cup pearl barley
2 tablespoons chopped parsley
Soak the beans overnight in water
to cover. Drain. Cook meat and
bones in the water for 1 hour. Add rest
of ingredients, excepting parsley, stick-
ing cloves in the onion. Let soup come•
to a boil, partly cover pot. reduce heat ,
so that soup simmers and cook about t
2 hours longer or until meat is tender
and beans and barley soft. Add pars- I.
last 10 minutes. Serves 10 people.
Broiled Chicken
Select broilers weighing 21/2 to 3 lbs.
each. Split chickens or broilers, place
in shallow pan, skin side down. Brush
both sides of broilers with melted fat
or margarine. Place pan about 4 inches
from heat and broil about 10 min-
utes. Turn broilers and baste with
accumulated juice and fat about every
10 minutes until tender and evenly
browned about 1 hour. Season with
salt and pepper and place pan in hot ,
oven, turning off heat, until time to '
serve. Garnish with parsley.
