Jewish Meals

This is a continuation of last
week's column on Salads. For the
basic steps in the preparation of
salads and the greens see the
column of Sept. 1. The reader will
note that in the following column
some seasonal fruits are added for
flavor variety.
Cottage Cheese, Pineapple.
Banana, Melon and Watermelon
Salad.
1/2 lb. pot cheese
1 ,-"a can pineapple chunks or fresh
pineapple chunks
2 bananas
Watermelon balls and melon
balls
2 cups broken salad greens
Make a ball of the pot or cottage

cheese and put it in the center of
a platter lined With greens, have
I a row of fresh pineapple cubed or
pineapple chunks, a row of melon
balls, a row of bananas, sliced or
in chunks, a row of watermelon
balls and repeat.
I Salad dressing: Mayonnaise a
little; top with paprika. Can use
French dressing the same way but
omit garlic. Can use chipped wal-
nuts, on salad or in dressing. Gar-
nish with fresh mint if obtain-
able. You can use a small amount
of Roquefort cheese in the French
Dressing. Can use lemon or orange
juice in the French Dressing in-
. stead of vinegar.

2 tablespoons grated horseradish
1 teaspoon salt
1 tablespoon sugar ioptionall

cup minced cucumber
1 tablespoon grated onion
1,,Isead lettuce broken into pieces
Drain beets, add water to make
cups, let it come to a boil and dis-
solve jello. Add vinegar. salt and sugar
and chill until mixture begins to
thicken. Add rest of ingredients and
pour into a mold. Refrigerate until it
is set. Unmold on lettuce. Serve with
mayonnaise to which 1 tablespoon
horseradish added or mayonnaise to
which rz cup drained shredded cucum-
ber, 1 tablespoon vinegar and
tea-
spoon salt has been added.

Beet Salad and Horseradish Mold
2 packages lime' or lemon
2 cups shoe string beets or boiled
