was sweet corn which is indigenous
to America. This happened to
Columbus too, who saw corn for
the first time when he landed in
Cuba on his second journey. In
buying corn remember that it loses
its natural sweetness soon after
it is picked, so avoid wilted and
yellow husks. The kernel should
be soft and plump. Corn should not
be husked until it is ready to be
cooked. It should be boiled covered
in unsalted water. Cover with 1/2
teaspoon sugar for 3 to 5 minutes
for young corn and 8 to 10 min-
utes for older corn. Overcooking
