An excellent way of preparing
it is on tarts. Here is a recipe
for a Strawberry Tart and also one
for the sponge cake, part of which
goes on top of it (the other part
can be used in various ways).
These recipes should satisfy the
sweet tooth of every member of

the family as well as your best
company.

Pastry
1 egg
lb. plus 2 tablespoons butter
.2 teaspoon salt
1 tablespoon sugar
2 cups flour
4 to 5 tablespoons cold water
Cream butter, salt and sugar; when
fluffy add 1 egg and beat smooth. With
a pastry blender work in the flour.
Add 4 to 5 tablespoons water gradually
using just enough to make a dough
that is quite firm. Handle the dough
as little as possible. Roll out the dough
on a lightly-floured board. Line a 10-
inch tart pan or a layer cake pan with
the dough. Trim off neatly one inch
above pan, turn under 1 5 inch dough
and crimp top. Prick all over bottom
with a fork, line pastry shell with
aluminum foil or buttered wax paper,
over which you sprinkle a good quan-
tity of raw rice or add beans to hold
it flat, bake In preheated 375 degree
oven 1/2 hour. Remove pan, take out
paper and rice or beans, put pastry
shell back in oven for 10 minutes snore
to brown top of shell. Cool shell. Re-
move shell from pan if using layer
cake pan. Add filling.
Fining
14 pt. heavy sweet cream, whipped
2 tablespoons sugar
1 tablespoon kosher gelatin
1 tablespoon milk
2 tablespoons berry juice or
1 teaspoon vanilla flavoring
Add sugar to whipped cream. Soak

add whipped cream. Add juice of
berries or flavoring. Put in tart shell
in refrigerator to set before putting
sponge cake on top.
Sponge Cake
qa cup cake flour (You may use or-
dinary flour but take off 1 table-
spoon)
3 eggs separated
2 cup sugar
3 tablespoons cold water
l• teaspoons salt
teaspoons baking powder
teaspoon vanilla
Sift flour before measuring. Beat
whites until they hold a point. add
salt, baking powder and vanilla while
beating. Beat egg yolks light, add sugar
and water and flour alternately, grad-
ually while beating; gently fold in egg
white mixture into egg yolk mixture
and bake 30 to 35 minutes in a 5-4
degree oven. When sponge cake cools.
cut in half horizontally and put on top
of filling.
Put attractive strawberries upright
on top of sponge cake; cover berries
with a glaze.
Glaze: In a saucepan dissolve 1 cup
red currant jelly in 1 tablespoon water.
Let it cool before carefully brushing it
on strawberries.
