THE DETROIT JEWISH NEWS

The "matzo shmura" flou4is
sifted and weighed by precision
instruments, and the exact, cor-
rect amount is emptied into a
stainless bowl. The required
amount of filtered water is added,
and the bowl is placed in a spe-
cially designed mixer for approxi-
mately two minutes, by which time
a smooth, even dough is available.

This is automatically spread
on the sheeting and rolling ma-
chine, prior to which a pinch of
dough is removed for the tradi-
tional "halla" offering.
From the rolls, the unbroken
sheet of dough travels through
dotting and scoring blades and as-
sumes the matzo shape and ap-
pearance. A cool air blower is then
put into operation, as according to
traditional law, the dough must be
cooled prior to entering the oven.
The code of Jewish law ("shul-
han arukh") allows a limit of 18-24
minutes for preparing the dough.
In the Horowitz-Margareten bak-
ery, the entire process — from
sifting through baking — takes no
more than 111/2 minutes.

Rabbi Named Spokesman
for Canadian Judaism

(Direct JTA Teletype Wire
to The Jewish News)

MONTREAL—For the first time
in Canadian history, the Jewish
faith represented by the rabbinic
chairman of the national religious
affairs committee of the Canadian
Jewish Congress, has been recog-
nized officially as "the spokesman
of the Jewish community in the
ecclesiastical sense," it was an-
nounced here Wednesday by Cana-
dian Secretary of State Judy
Marsh.
In informing the CJC of this
policy, she noted that the prece-
dent for such recognition was set
some time ago by the late Govern-
or-General Georges P. Vanier.
Vanier had invited Rabbi S. M.
Zambrowsky, chairman of the CJC
religious affairs committee, to
represent the Jewish faith in "Ca-
tegory 12" of the government's
"table of precedence." Now, Miss
Marsh told the CJC, "steps will be
taken to list Rabbi S. M. Zambrow-
sky in the guide to relative prece-
dence."

There are about 60,000 libraries
in the United States and Ameri-
cans borrow 500,000,000 books a
year.
