ZUNSER (Direct JTA Teletype Wire to The Jewish News) Passover, the Hebrew Spring Festival is celebrated by Jews, in commemoration of their exodus from Egypt, by a family feast in the home and by abstaining from leaven during the seven days of the feast. In memory of this, the ancient Israelites were for all time enjoined to eat unleavened bread (matzo) for seven days. This fam- ily ceremonial is still kept on and has gradually, over the cen- turies, developed into a special ritual which has been retained and revered by Jews up to the present day. The paschal lamb is no longer eaten (except by Samaritans) — conditions of life in the Diaspora made this impossible — but is now represented by the shank bone of a lamb, or even the neck bone of a chicken. matzot, bitter herbs and charoset are eaten; 4 cups of wine are drunk before and during the repast; and psalms are chanted. The service, set forth in the Hag- gada, includes a description of the exodus, with a running commen- tary, and is begun by the youngest child of the house asking the father, who presides over the festivities, four questions, with the father answering and giving the reason for the differences in the Passover custom from those prevailing the rest of the year. All through the ritual, the father stresses the fact that the celebra- tion centers around the children. Songs are chanted, amusing leg- ends are retold to keep their in- terest, and they are exhorted not to break a custom that has en- dured for three and a half millenia and to continue it in their genera- tion. Put a peeled apple in turkey or 6 or 7 prunes (tor flavoring of meat of turkey). 7 cups farfel 6 tablespoons fat (chicken) 1 onion, minced 1 cup diced celery .2 cup raisins 1 egg 1 cup chicken broth or water 2 teaspoons salt, 1 teaspoon pepper . Saute onion and celery in chicken fat. Rinse and drain raisins. Pour over matzo farfel cold broth or water which will be absorbed by added egg well beaten, seasonings. Combine and toss lightly, Almond Torte , 2 lb. shelled almonds, ground 7 egg yolks I cup sugar Rind and juice 1 lemon teaspoon salt 7 egg whites Beat egg yolks with cup sugar until thick, add rind and juice of lemon, add ground almonds. Beat egg whites stiff, but not dry, add 1/4 cup sugar and 1/4 teaspoon salt and con- tinue to beat until stiff. Fold into above mixture.
