Add egg yolks one at a time and con-

powder and add gradually with 5 table-
spoons of milk. Put batter in a greased
6 3/1 by 10 3/4 baking pan. Beat egg whites
until frothy, add 3/4 cup sugar gradually
and continue to beat until eggs stiff,
fold in 3/4 cup cocoanut and put on top
of gold part. Bake in a 350 degree oven
40 minutes. When cake cools, cut cake
into squares and remove from pan.

Ruth's Date-Nut Bread

4

1 cup boiling water
1 small package of dates
1 teaspoon baking soda
3 tablespoons vegetable shortening
1 cup sugar
pinch salt
2 cups flour
1 teaspoon, vanilla
1 egg well beaten
1 cup walnuts into small pieces

Cut dates into small pieces, add 1
teaspoon soda and pour 1 cup of boiling
water over It. When cool, cream vege-
table shortening with 1 cup sugar and
pinch of salt, add to dates, water and
soda together with egg, flour, vanilla
and walnuts mixed with 1 teaspoon of
the flour. Do not beat. It does not
matter if' batter is lumpy. Bake 1 hour
in a 325-degree oven.
