Coffee Cakes

lb. butter
11/2 cups flour
3 teaspoons baking powder
pinch salt
2 /3 cup sugar
1 egg
'/2 cup milk
1 teaspoon vanilla
Mix and sift flour, baking powder
and salt, add butter and sugar and
blend with blender or two knives in
both hands (one in each) or rub be-
tween thumb, forefinger and middle
finger into crumbs like for a pie crust,
add 1 egg, 1/2 cup milk and 1 teaspoon
vanilla, put half of it into a nine-inch
tube pan, cover with half of filling,
cover with other half of dough and
sprinkle other half of filling on top
and bake in 350 degree oven about
45 minutes.

1/2 teaspoon cinnamon
2 tablespoons butter
Melt butter and add rest of ingredients.

1 cup butter
2 cups sugar
3 cups flour
4 eggs (separated)
3 tablespoons baking powder
1/2 teaspoon salt
1 lemon, grated rind and juice
1 cup milk
Cream yolks of eggs and sugar to-
gether until mixture is lemon colored
and flows in ribbons from beater, sift
flour, baking powder and salt together,
cream butter until light, add egg mix-
ture, lemon juice and grated rind, add
flour and milk alternately to the mix-
ture, ,fold in egg whites beaten stiff
but not dry.
Bake in greased 10-inch spring form
about 45 minutes in a 350 degree oven.
