Old Jewish Recipe: Pizza THE DETROIT JEWISH NEWS

Julius Schreiber, president of
Schreiber Caterers, Inc., announces
that Latzi Wittenberg, food editor
and chef, has joined the company
as executive chef for food research
and new product development.
Schreiber processes a line of
ready-to-eat frozen foods now serv-
ing airlines and hotels, steamships
and institutions.
Wittenberg has been consultant
to many leading organizations and
companies on the subject of kosher
foods, menus and preparation. He
is currently kosher food editor of
Chef Magazine, the leading voice
official publication of Amer-
jean chefs.

At one time the personal chef
of former Czech President Dr.
Edouard Benes, he has also pre-
pared menus and foods for such
international figures as Sir An-
thony Eden, Winston Churchill,
Dr. and Mrs. Chaim Weitzman,
David Ben-Gurion and Dwight
D. Eisenhower.
In his program with Schreiber,
Wittenberg has developed a full
line of strictly kosher gourmet din-
ners, a full line of diet meals and
other specialties in bulk steam-
table size aluminum foil trays. All
of these are ready-to-heat and
serve.

loyal pizza fans, may have been
guided unknowingly by Jewish his-
tory, if the Detroit Free Press
Action Line knows its anchovies.
A pizza maker who asked for
the originator of pizza—"the Ital-
ians or Chinese?" — was told in
Tuesday's paper:
"The Italian American Histor-
ical Society regretfully admits
stuff dates from unleavened bread
(matzo) Jews ate at Passover.
About 200 B.C. Roman soldiers
spiced it up with cheese and olive
oil, took it home to Italy. When
the Empire fell, so did the dough,
but custom of baking bread in
public ovens kept it alive in the
provinces."
