Jewish Meals
Observant readers will have no-
ticed how often of late this column
has stressed the virtues of the
more economical cuts of meat;
this is done also in the interests
of wholesomeness, variety as well
as good nutrition. Today's column
therefore is devoted to Lungen
Stew, often prepared by our moth-
ers, neglected by the daughters
and is a welcome change.
In modern Israel it is a favorite
and is known as "R ayots" which,
in Hebrew, also means "to see."
The Yemenites believe it is good

2 potatoes, cubed
Salt and pepper to taste
1 tablespoon minced parsley
Melt fat, add onions, garlic and water
and stew until onions transparent. Add
lung, meat, cubed, tomatoes or puree,
sugar, salt and pepper and stew gently
adding water if necessary, about 1 hour.
Add carrots and potatoes, cubed and
stew gently another hour or more until
tender.
Add parsley before serving.
Variation 1 — May add sliced mush-
rooms ( 1,' lb.) before finished.
Variation 2 — May add lemon juice
or V cup white vinegar and sugar to
taste at the beginning of cooking. Do
not add vegetables.

used with soup—plain—or as an
hors d'ouvre with drinks.
Lungen Stew
Cut veins from lung before cutting
into cubes.
2 tablespoons fat
2 onions, sliced
1 clove garlic, minced
1 teaspoon water
1 beef lung, cubed
1 lb. lean beef, cubed
1- cup canned tomatoes or small can
tomato puree
1 tablespoon brown sugar
2 carrots, cubed
Lungen Piroshki
Dough
2 cups flour
3 teaspoons baking powder
teaspoon salt
3 heaping tablespoons vegetable
shortening
2 eggs
About 1,4, cup ice water
Sift flour, baking powder and salt
together, cut in vegetable shortening,
add eggs well beaten and enough ice
water to bind dough.
Roll out dough on floured board about
14,
inch thick, cut into three inch
edges together forming a triangle, prick
with a fork, brush with 1 egg yolk
diluted with equal amount of water,
bake in 375 degree oven on greased
baking dish until brown about 20 min-
utes. Serve with soup.

Fillings
1—Grind or chop any meat and/or
lung left over, adding 1 onion. minced
and browned in 1 tablespoon fat, and
one or two hard-boiled eggs minced or
chopped altogether with meat, and/or
lung.
2—Cook lung with 1 bay leaf. one
onion, carrot, 2 peppercorns, 1/2 cup
white vinegar in salt water, about 1 1/,
hours until tender, grind or chop with
1 onion. minced and browned in 1
tablespoon fat. 1 tablespoon minced
Parsley and 1 egg well beaten and all
mixed together.
