Apricot Torte
1/2 lb. dried apricots
3 oz. i 6 tablespoons) butter
1'i: cup sugar
2 egg yolks
11:, cups flour
v., teaspoon baking powder
Cook dried apricots in a little water.
When soft. strain and add sugar to your
taste. Cream butter and sugar, add egg
yolks and continue to beat. mix flour
with baking powder and sift trge-ther,
add butter. sugar and eggs and refriger-
ate one hour. This is your dough. Roll
out 1 i, (one half I of the dough and line
an 8 x 8 pan with it, bringing dough up
to sides of pan one inch, cover bottom
of dough with apricots and cover with
damson plum jam. use rest of dough to
make a lattice work top and bake in
375 degree oven until brown.
Carrot Ring
1 cup shortening (1/2 vegetable short-
ening and 1,2 butter if milhig and
all vegetable shortening if not)
1/2 cup brown sugar
1 egg
2 tablespoons water
2 cups grated carrots
11/2 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
1b teaspoon salt
Cream shortening and sugar very well,
add egg and water and continue t
beat. add carrots and mix well. sift flour
together with baking powder, baking
soda, nutmeg, cinnamon and salt and
mix well. Bake in a well greased mold
and bake in a 350 degree oven about
1 hr.
