This dish may be served with stewed red cabbage and potato latkes or potato pudding or noodle kugel. Sauerbraten 4 lbs. brisket or chuck 1 teaspoon salt 1 cup water 1 cup cider vinegar 2 thin slices lemon 2 bay leaves 1/4 teaspoon peppercorn 1 clove minced garlic 1 /4 cup brown sugar (well packed) 2 large onions sliced thin 1 cup tomato sauce 4 gingersnaps Bring to a boil marinade of water, vinegar, lemon slices, salt, spices, minced garlic and sugar. While mari- nade is still hot pour over meat which has 'been put in a casserole or crock cover and refrigerate 2 days or over- night. Remove meat, reserving mari- nade, dry and brown meat well in a little fat. Remove add sliced onions and saute until translucent. Add meat and tomato sauce and about 1/2 cup of marinade in which meat soaked. Cover and stew gently about 3 hours adding marinade, a little at a time as needed. When meat tender thicken gravy with gingersnaps and cook smooth. Noodle Kugel yi lb. noodles thin, medium or broad 4 tablespoons melted chicken fat V4 teaspoon salt 2 large apples, peeled, cored and grated on large grater or 1 cup drained crushed pineapple or 2 cups stewed prunes pitted and cut into small pieces 3 eggs separated 4 tablespoons sugar 1 teaspoon lemon juice 1 teaspoon grated lemon rind Boil noodles as directed on package, add egg yolks, salt, sugar, melted fat, ;quit, lemon juice and rind and mix well. Drain on absorbent paper. Serve with apple sauce mixed with crushed pineapple. Serves five. Hanuka Cookies 1/2 cup kosher vegetable shortening 1 cup sugar 1 egg 1 ,4 cup orange juice 21/2 cups flour 2 teaspoons baking powder Cream the vegetable shortening and sugar. Mix baking powder and flour together. Add egg to shortening mixture and mix well add flour and orange juice alternately mixing between each addi- tion and mix well. If dough does not roll easily add more flour. Roll and cut out as desired. Bake in 375 degrees oven about 10 minutes. Makes about 3 dozen cookies.
