IN ADVANCE The humble rice pudding of lowly origin, but topped with the right ingredients can become an epicurean dessert and fit for the rich man's table. Variations of this popular dish, on the tables of various races of the several con- tinents, can be found everywhere. Mandelbrot, as the name implies reveals a Germanic origin but was adopted by Jews and brought by them into the Slavic countries dur- ing their wanderings north and eastward in the wake of the marauding Crusaders. The recipe here offered for Mandelbrot was sent to me from a reader in Wor- cester, Mass., and is one of her family's favorites. I tried the re- cipe and found it excellent. The rice pudding here offered is "Milhig" since it is made with milk. The Mandelbrot can be either parve, baked with a vegetable oil or Milchig, if butter is used. Served crisp and brittle with tea or cof- fee or even wine for Simchas it literally melts in your mouth. By ROSALIND S. ZUNSER (Copyright, 1966, JTA, inc.) INCORPORATED folding same into batter.
