Jewish Meals

% cup water
34 tablespoon butter
pinch salt
1 egg
3 /4 lb. apricots or plums
1 /4 cup bread crumbs
3/4 lb. butter
3 /2 tablespoon sugar
Heat water in saucepan add butter
and when it melts add flour and salt
all at once and stir vigorousy until
mixture no longer sticks to spoon or
pan. Remove from fire and cool. Add
egg and beat until well blended. Form
into a roll, cut into thin slices. Wipe
apricots or plums wrap each in a slice
of dough until covered all over. Place
dumplings in boiling water and cook
slowly five minutes. Drain. Fry bread-
crumbs in J/4 lb. butter until yellow.
Roll dumplings in breadcrumbs (fried).
Sprinkle with sugar. If apricots or
plums are too sour, remove pits and
put some sugar in center. Do this be-
fore putting dough around fruit.
Apricot or Plum Dumplings
Made With Potato Dough
I lb. cooked potatoes
1 cup flour or 1/4 cup farina
and lh cup flour
1/2 teaspoon salt
1 egg
7 freestone plums or 7
apricots
1 /2 cup breadcrumbs
1 /4 lb. butter or margarine
cup sugar
Boil potatoes in jackets. Cool, peel
and grate on large grater add egg and
flour or farina mixed with flour and
salt and mix well. Add more or less
flour it you think it necessary. Form
potato dough into a two:inch roll, cut
in thin slices, use each slice to cover
plum or apricot which has been pitted
and replaced by a little sugar and cin-
namon. Be sure each plum or apricot
is entirely covered. Drop into boiling
salted water (1 teaspoon salt to 1
quart water) and boil 10 minutes if not
using farina in dough, if using same
boil slowly 20 minutes. Drain. Lightly
brown breadcrumbs in butter or mar-
garine and roll dumplings in same.
Sprinkle with sugar.
Variation: Can fill dumplings with
jam instead of fruit, preferrably plum
jam or lekvar. Dumplings good used as
a garnish to sauerbraten. Also used as
' a dessert.

"Reviews and Previews" of plays
produced by Center.Theater during
its eight seasons will be featured
in the first program of the Theater
series, 8:30 p.m. Sept. '7 at the
Jewish Center.
Leonard Bradley, managing
director of Center Theater, will
discuss a few of the plans for the
season, nad there will be scenes
from "Anniversary Waltz, comic
highlights from "Ring Round the
Moon," and a• preview of "A
Thousand Clowns," to be produced
next _spring. The performers will
include Nelson Chase, Joyce Feur-
ring, Victor H u r wit z, Sylvia
Josephson, Rollon Parker, Bluma
Seigal and Ruth Seligson.
Coffee and conversation will
follow the program. There is a
nominal charge for nonmembers.
