Let batter rest one hour. Bat- ter should be smooth. Slice apples thin after peeling and coring. Add to batter just before ready to fry pancakes. Add enough butter in frying pan to coat bottom and sides of frying pan well. Add two or three tablespoons batter in fry- ing pan. Tilt pan to spread batter, brown bottom, turn and brown other side. Repeat until all batter is used. Sprinkle pancakes with sugar and cinnamon and lemon juice, cover with berries or jam, roll each pancake as if for a jelly roll. Sprinkle with more sugar and cinnamon and put on a plate. Sprinkle pancakes with warmed Jamaica rum or warmed Apple Brandy, ignite and bring to table flaming.
