Jewish Meals
You may call them latkes, pan-
cakes or crepes; they are good in
any language. At one time they
were associated mostly with re-
ligious observances. But in our
day they are a year round treat.
In Colonial America pancakes
were mainly a breakfast dish but
now are often served at lunch and
dinner. It was said that Napoleon
was very superstitious and would
not trust his chef with the making
of crepes—not even his Empress
Josephine—since they only could
be turned four times lest evil re-
sult. He made them himself; dis-

Batter:
3 eggs
3/4 cup flour
pinch of salt
% tablespoon of sugar
1 cup milk
1 tablespoon melted
butter
Beat egg, add flour, sugar, salt,
milk and butter and beat very
well. Let batter rest one hour. Bat-
ter should be smooth. Slice apples
thin after peeling and coring. Add
to batter just before ready to fry
pancakes. Add enough butter in
frying pan to coat bottom and
sides of frying pan well. Add two
or three tablespoons batter in fry-
ing pan. Tilt pan to spread batter,
brown bottom, turn and brown
other side. Repeat until all batter
is used. Sprinkle pancakes with
sugar and cinnamon and lemon
juice, cover with berries or jam,
roll each pancake as if for a jelly
roll. Sprinkle with more sugar and
cinnamon and put on a plate.
Sprinkle pancakes with warmed
Jamaica rum or warmed Apple
Brandy, ignite and bring to table
flaming.
LUNCHEON CREPES
Batter:
1 cup flour
4 eggs
1.Y., cups clear soup or water or half
and half
1 tablespoon melted margarine

1 tablespoon batter into pan, tilt-
ing pan to permit batter to spread.
After browning slightly on bottom,
turn and brown slightly. Repeat
until all batter is used. Fill by
putting 1 tablespoon filling one
inch from edge and roll.

cooked veal
1 teaspoon lemon juice

1 tablespoon minced parsley
2 tablespoons flour
2 tablespoons margarine

Saute onion and garlic slightly,
in 3 tablespoons margarine. Add
mushrooms which have been
sprinkled with lemon juice, cover
and cook slowly about 15 minutes.
Add chicken or veal or combination
of both, sherry and minced pars-
ley. Remove from fire. Make sauce
consisting of 2 tablespoons mar-
garine melted. Add 2 tablespoons
flour, let it brown slightly, add 11/2
cups soup and let it thicken. Add
to chicken. All should be moist
not wet. In wet, drain and use for
topping after putting crepes in
greased baking dish to heat
through.
