Rub cavity with 1/2 lemon, minutes. If too much sauce spoon over duck and serve rest in a sauceboat. put in a few celery leaves and 1 onion sliced. Rub outside of duck with lemon, May add 1 tablespoon Sherry or Ma- deira to sauce. rub with salt, pepper and garlic. Roast DUCK WITH BING CHERRIES breast side up in shallow pan in 325 degree oven. Drain fat and prick duck Roast duck in ordinary manner using all over after one half hour. Baste first recipe. ROAST DUCK WITH ORANGE SAUCE Juice of 1 orange 1 tablespoon brandy Celery leaves 1 onion sliced INCORPORATED Salt and pepper to taste Wash duck with orange juice and 1 tablespoon brandy and refrigerate 3 hours. Stuff with celery leaves and onion, salt and pepper. Make stock with giblets, carrot and onion and salt. Put in shallow pan, breast side up in preheated 325 degree oven. Drain fat and prick duck all over after lh hour. Baste frequently with orange juice and dry white wine. Prick duck every 1h hour and remove fat. When tender and brown remove from oven quarter and pour over sauce and gar- nish with slices of orange.
