The OAK PARK SYMPHONY
SOCIETY, under the baton of
Wayne Dunlop, will expand its
programs from four to five con-
certs for the 1966-67 symphony
season. Memberships will be avail-
able to area residents at the same
price. For applications, call Mrs.

among the concerts will be Rose
Marie Floyd and her ballet com-
pany, the Oak Park Elementary
School Student Chorus and Ken-
neth Jewell Chorale.

Jewish Meals

our grandmothers did not go in for
dieting they still favored fish for
other reasons, and baked fish with
vegetables should appeal to the
weight-conscious.

as varenikes with fruit, will top a
tasty and satisfying milhig repast.

WYN-HAROLD CATERING

Baked Fish and Vegetables
3 lbs. whitefish or pike, sliced into
serving pieces
3 teaspoons salt
1/4 teaspoon pepper
Y4 teaspoon paprika
1 cup mushrooms quartered
(optional)
2 onions sliced thin
IA cup diced celery
I green pepper, sliced thin
2 tomatoes halved
ii cup green beans sliced in li-inch
pieces
2 carrots diced
3 potatoes peeled and quartered
1/4 lb. butter or margarine or N-cup oil
1 clove garlic (minced)
Preheat oven to 425 degrees. Put in
pan and melt butter or heat oil, add
fish sprinkled with 2 teaspoons salt,
pepper and paprika, add all vegetables,
sprinkled with 1 teaspoon salt, cover
and reduce heat to 350 degrees and
bake, baste occasionally. Remove cover
last 15 minutes. Should be ready in
about 40 minutes.
Varenikes
Dough:
2 eggs
2 tablespoons water
i/ teaspoon salt
2 cups flour
Make a well in center of flour which
is put on a pastry board, add eggs,
water and salt, mix the eggs, water
and salt with a fork and gradually
work in flour. Knead until smooth,and
elastic. Roll and stretch the dough as
thin as possible. Keep turning dough
so that it will be rolled evenly (about
IA inch). Let dry a little but don't let

it get too dry. Cut into 3-inch squares,
place a tablespoon of cooled filling
on each, fold over and pinch edges
together with a little water. Drop
filled varenikes into rapidly boiling,
slightly salted water and turn heat to
a moderate boil. The varenikes should
rise to the top when done and should
be drained and placed in a buttered
baking dish. Drizzle melted butter
over them and bake about 15 minutes
at 350 degrees until lightly browned.
Serve with sour cream.
Sour Red Cherries or Blueberries
3 cups berries
3 A cup sugar
1 teaspoon lemon juice
1 tablespoon cornstarch
1 tablespoon cold water
Stew fruit with sugar and lemon
juice. Combine cold water and corn-
starch. Add to fruit and cook alto-
gether over low heat about 10 minutes,
stirring frequently. Drain reserving
syrup. May serve with sour cream or
syrup or both.
Cheese Filling
1 lb. dry pot cheese
2 tablespoons melted butter
2 eggs
1 teaspoon salt
After filling and boiling as above
directed, bake in a casserole or baking
dish which has been greased, drizzle 3
tablespoons melted butter on top and
bake in a 350 degree oven 20 minutes
or until brown.
Variation: Add small can crushed
pineapple and 2 teaspoons sugar to
cheese filling.
Variation: Add 1/2 cup mashed po-
tatoes, fried onion, salt and pepper
to taste to each cup of dry pot cheese.
Chopped Meat (boiled)
Add 1 egg browned onion salt an?
pepper to each cup of boiled chopped
meat, salt and pepper to taste. Use
fat for greasing pan in which browned
and dribbling on top of varenikes.

State Fair Beauty Contest

Michigan's prettiest girls and
most talented baton twirlers were

reminded today that entries must
be submitted now for the Michi-
gan State Fair's beauty queen and
baton twirling contests.
The fair opens Aug. 26, and
runs through Labor Day, Sept. 5.

The deadline for entering the
Miss Michigan State Fair contest
is Aug. 24.
