Jewish Meals It is always a puzzle to me why Jewish housewives are so rarely adventurous in dishing up "some- thing new" for their families. For one thing—the "old" is so well ap- preciated, why bother? This is par- ticularly true of fish dishes which had become so traditional in the Jewish home that any deviation is almost akin to a breach of faith. However, do try this one and see whether your critical family won't crown you with new laurels. As to the dessert this week, why not try Jelly Roll?—Simple to bake as it is good to eat. What's more— it keeps well. Not that it is ever allowed to stay long what with chil- dren and grandchildren always hopping around the cookie platter. Chopped Fish and Chopped Spinach Steamed and Molded 6 oz. butter 2 lbs. salmon 2 lbs. spinach 2 lbs. halibut 5 onions 1 /4 teaspoon nutmeg (optional) 2 eggs 4 egg yolks 4 egg whites 2 cups sweet cream salt and pepper to taste Chop salmon well, add two onions grated and two egg yolks, salt and pepper to taste and mix well. Fold in two egg whites beaten stiff but not dry and one cup of heavy sweet cream beaten stiff. Put salmon in mold well greased with three ounces of melted butter. Dry spinach well and chop well, add one onion grated and two eggs. Salt and pepper to taste and Y4 tea- spoon nutmeg (optional). Put spinach mixture on top of salmon mixture in mold. Jelly Roll 4 egg yolks 4 egg whites 1 cup sugar 1 tablespoon orange juice 1 tablespoon lemon juice rind of one lemon grated 1 cup flour .(measured after sifting) 1 teaspoon baking powder 1/4 teaspoon salt Lightly butter a jelly roll pan 15x10 inches, line with wax paper, and lightly butter wax paper and sides of pan, add batter and bake in 400 degree oven about 12 minutes or until toothpick inserted comes out clean. Beat egg whites stiff but not dry, adding, while beating, 1/4 cup sugar. Put aside. Mix dry ingredients and sift again. Beat egg yolks until lemon colored. Add gradually rest of sugar, continue beating, add orange juice, lemon juice and rind and beat well. Fold in lightly to above egg white mxiture then fold in lightly flour mix- ture. Put in wax lined pan and bake as directed. Lay dampened towel or cloth on table, remove pan, lay on dampened cloth, remove wax paper with sharp knife cut off crusty edges and roll cake together with towel and let stand a few minutes. Unwrap, spread with jelly or whipped cream mixed with raspberries or sliced straw. berries (if roll to be served shortly) re-roll and wrap in wax paper until serving time. Mrs. Joseph G. Fenton, charter member and historian for Women's American ORT (Organization for Rehabilitation Through Training) Michigan Region, has inaugurated an idea for recording the history of the organiza- tion in this 25th year of its exist- ence. In order to ex- pedite her task, and to suppl e- ment the records, she has planned a "Class Reunion Tea" at her home, s 17525 Oak, 2 p.m. Mrs. Fenton Saturday. She has invited all ORT presidents of re- gion and chapters, past and pres- ent, as well as a group of "pillars of ORT," a group of women who have contributed to the success of the organization. Each president will come pre- pared with a brief completed ques- tionnaire highlighting the accom- plishments of ORT during her ten- ure of office.
