Proclaimed C a nc er Con tr o 1 Month by both President Johnson and Governor Romney, April will see thousands of ACS volunteers distribute educational material which has already helped save the lives of more than 1,400,000 Amer- icans who have been cured of can- cer. During April the society con- ducts its once-a-year campaign to raise funds for its programs of re- search, education and service. The 1966 Crusade will be climaxed by a house-to-house visit by volun- teers April 26. Coulibiac or Cabbage Pirog, as the name implies, is of Russian or- igin, and is a most versatile dish in that it may be served as a lunch- eon main dish or as a side dish with borsht. It is also a great fa- vorite at a buffet. It is said to have originated with the Germanic tribes that settled on the banks of the Volga River some 200 years ago. Finding cabbage very plentiful and inexpensive in their new home, they conceived the idea of putting it in a pie crust and serving it, piping hot, during the severe Russian winters. Its fame has spread to other countries too, and, even in France, where cook- ing has been refined into an art, it is served "aux choux" (with cab- bage) or "de sampan" (with sal- mon). In my own home I have often served it as an hors d'ouvre with drinks, with satisfying suc- cess. It can also be made with meat when the meal to follow is "Fleishig." Dough: 21/2 cups flour 1 /2 lb. butter 1 cup sour cream With a pastry blender or two silver knives, one in each hand, cut ingredi- ents into pieces the size of peas, form into a ball and refrigerate overnight. May also use a fish filling or a meat filling with another dough. Filling: 5 to 6 cups cabbage 2 large onions sliced 1 tablespoon salt 1 /2 teaspoon sugar 1 cup sour cream 3 tablespoons butter 34 lb. mushrooms (sliced) Chop cabbage and onions fine, salt and cover and allow to stay about 15 minutes, squeeze dry, melt, pour boiling water over cabbage and drain well, butter in skillet, add cabbage, onions, mushrooms, cover and stew gently about 20 minutes. Cabbage should not be brown. Add sugar and sour cream. Season to taste. MEAT COULIBIAC Dough: 2 cups flour 1/2 cup margarine or 1/2 cup crisco pinch sugar 1 /2 teaspoon salt about 7 tablespoons cold water or more, enough to make soft dough Rub shortening into flour with finger tips. Add water a little at a time until dough formed. Refrigerate half an hour before using. Use as above. Filling: 1 lb. ground meat 1 ,4 lb. chopped onion 1 /2 lb. finely chopped mushrooms 2 hardboiled eggs chopped 1 egg (raw) 3 tablespoons fat salt and pepper to taste Saute separately beef and onions in fat, and mushrooms in fat. Mix all in- gredients together. Add 1/2 cup gravy thickened with 2 tablespoons flour or 1 /3 cup beef stock thickened with 2 tablespoons flour. Roll dough into a rectangle, arrange the filling in the middle and pinch together over the filling. Put on a greased baking sheet so that part pinched together is on bottom. Paint with egg yolk and 1 tablespoon water, and prick with a fork to permit steam to escape. Bake in preheated 400 degree oven until nice and brown.
