The festival of Pesach, or Pass-
over, which celebrates the libera-
tion of the ancient Jews from
Egyptian slavery, is observed for
eight days beginning with the 14th
day of Nissan to sunset the twenty-
second. In Israel today, as in
ancient Palestine, it is celebrated
for seven days; the eighth day was
added for the diaspora. Some
scholars believe it had been cele-
brated as a Spring holiday even
earlier, as witness at the Seder
table, the presence of greens such
as parsley, lettuce or watercress,
symbolizing the hope and redemp-
tion, and the egg, universal symbol
in Spring rites.
The holiday begins with the
Seder, on the eve of the first day,
by reading the Haggadah which re-
calls the time over three millenia
ago when the Hebrews, held as
slaves, built cities for their Egyp-
tian prince, had delivered them
on this day, believed by many to
be the first instance in history of
a revolt for freedom.
Passover is the time for home-
coming. So deeply beloved and
so rooted had it become that mem-
bers of a family, living in remote
cities, return to the home of a
parent or grandparent for the hal-
lowed occasion. All sit around the
festive board in a home thorough-
ly cleansed beforehand of all man-
ner of "Chometz" and participate
in the colorful ceremonies, aimed
particularly at reaching the chil-
dren, who are expected to be in-
spired, and to continue the tradi-
tion unto the coming generations,
all to eat of the Matzoh, the un-
leavened bread symbolic of the
hasty flight of our ancestors. to sip
the sacramental wine, to chant the
Haggadah, the narration of the
story, and to sing the many songs
ending with the "Chad Gadya" the
story of the kid that my father
bought for two "Zuzim."
The symbols used in the Seder
Service: Three matzohs, repre-
senting the bread of affliction; the
middle one, the Afikomen, is then
hidden and later redeemed. The

orate the Paschal sacrifice. The
roasted egg to symbolize the
Spring; the bitter herbs, Israel's
bondage. The Haroset stands for
the mortar used in building treas-
ure cities for Pharoah. The pars-
ley, lettuce or watercress com-
memorate the Spring and perpet-
ual renewal of life. The four cups
of wine for the four promises of
redemption. The cup of wine for
Elijah for the hope of the com-
ing of the Messiah. As a symbol
of freedom, cushions are provided
for all participants at the Seder
table.
The meal served that night is a
memorable and festive one. One
menu follows:
Menu for Seder

Matzoh Balls (Knaidlach)

Sliced Tomatoes and Sliced Cucumbers
Sponge Cake
Prune and Apricot Compote or
Fresh Fruit

3 eggs
yl cup sugar
1/2 teaspoon salt
2 cups matzoh farfel or matzoh
crumbled into bits
1 cup cold water
3 tablespoons vegetable fat
2 cups diced apples
3 egg whites beaten stiff but not dry
Beat yolks well, add salt and sugar
and continue to beat until lemon
colored. Pour cold water over farfel,
drain immediately and add yolks, salt
and-sugar well beaten, chicken or vege-
table fat, apples and whites beaten stiff
which should be folded in. Bake in
muffin tins or a ten-inch square pan
then cut into squares. Pans or tins
should be well greased. Bake in 350
degree oven about 35 minutes or
browned on top. (Makes 10 cupcakes).
Matzoh Balls (Knaidlach)
2 eggs beaten slightly
1 full tablespoon chicken or
vegetable fat
1 teaspoon grated onion grated on
large grater
2 tablespoons cold water
3 almonds chopped fine
1/2 teaspoon chopped parsley
1 /2 teaspoon salt
1 cup matzoh flour
Mix eggs, salt, water. fat, parsley,
chopped almonds, onion together well.
Add matzoh flour and refrigerate
about 1 hour. Before putting mixture
in refrigerator it should be pasty.
Moisten hands, shape into balls (small)
and cook in boiling water salted and
covered. Lower light and simmer. Sim-
mer 20 minutes without peeking.
Sponge Cake
7 eggs separated
1 cup sugar
3 tablespoons orange juice
1 tablespoon lemon juice
, ,/4 cup matzoh meal
1/2 cup potato flour
7 egg whites beaten stiff but not dry
Beat egg whites stiff but not dry,
gradually adding sugar. Beat egg yolks
until lemon colored and add orange
and lemon juice, and fold into egg
white mixture. Sift matzoh meal with
potato flour 3 times and fold into
above mixture. Bake in 315 or 325
oven 1 hour or until toothpick inserted
to test comes out clean. Invert pan
on rack to cool overnight. Should fall
out, otherwise loosen and remove.
Drink not from one cup with
thine eye fastened on another.
