Jewish Meals It was, after all, inevitable, since this column of Jewish cooking be- gan a few weeks ago, that some reader should inquire about a non- Jewish "Maichel" that one could adapt to kosher cuisine. A reader from Detroit would like to know how to make a kosher pizza. In fact he. would like three recipes: 1) Milchig; 2) Flaishig; 3) Parve. Well, why not? The Jews have ever been willing to learn from their neighbors if by so doing they do not violate their own tradition. In the world of good food there is a benign give-and-take. You give U.S your pizza and we give you hot pastrami on Jewish rye with dill pickles, bagel with lox, blintzes and borsht. It is better that nations adopt each other's "Meichulim" than that they should fight wars. Pizzas • Dough: Dissolve 1/2 package of gran- ulated yeast or 1i yeaSt cake in 1/2 cup lukewarm water. Sift three cups of flour on board, n-sake a well in the cen- ter and put in it dissolved yeast, 1 teaspoon salt and 1 cup lukewarm wa- ter. Work this gradually into the flour. The dough should be soft so that it can be easily rolled or stretched. Add more lukewarm water if necessary. Knead well for about fifteen minutes. Add 1 tablespoon oil and continue to knead until well blended into dough. Shape it into a ball. Put dough into bowl, cover with a clean cloth and let rise double. Roller stretch the dough until it is 1/4 inch thick to fit a large oiled pan. Dough should extend 1/4 inch above rim of pan. Cover the dough with 1 tablespoon oil and with tomato sauce and meat, fish, vegetables or cheese as suggested below. Bake in 450 degree oven thirty minutes, reduce heat to 300 degrees and bake about fifteen minutes longer. Pizzas can be By ROSALIND S. ZUNSER (Copyright, 1966, JTA, Inc.) Agency) frozen. In that case bake only thirty minutes. When removed from freezer bake in 300 degree oven fifteen min- utes. Sauce: Stew gently in two table- spoons oil, two diced onions and one clove garlic, diced until translucent, not brown. Add 1 lb. can tomatoes, preferably Italian, 1 can tomato paste. 3 4 teaspoon oregano, 1 teaspoon salt, 1 /2 teaspoon pepper, cover and let that simmer gently about two hours, until nice and thick. Flaishig 1 onion minced sauteed a little, add lb. mushrooms, continue to sautee five minutes, add 3 4 lb. chopped beef, continue sauteeing until beef loses redness. Mix with tomato sauce. Put sliced stuffed olives on top. Variation: Instead of meat use sliced bologna or salami. Put on top of to- mato sauce. Put sliced stuffed olives on top. Can mince any leftover meat also. Milchig Cover tomato sauce with 3/4 lb. grated Swiss or American cheese. Sprinkle with Parmesan cheese. Variation: May add about five chopped anchovies on tomato sauce before adding cheese. Parve Cover tomato sauce with 1 eggplant peeled and diced sauteed in oil with 12 lb. mushrooms, 1 green pepper diced and one minced onion. Variation: Instead of eggplant use zucchini which has been sprinkled with salt, covered, set aside 1,2 hour and then drained and thoroughly dried. Can use pieces of boiled, fried, canned or broiled fish mixed with vegetables. 30-Year-Old Ketubah Found in SW Detroit A Ketubah (marriage contract) dated June 1, 1937 was found in the Springwells Ave. area, on the near Southwest Side and is being held by the Jewish Welfare Fed- eration until it is claimed by its owners.
