over it. Put dabs of butter on top of
fish. Cover and bake in 350 degree
oven. Serves about eight people.
Mamiliga and Brinza
1 qt. water
1 teaspoon salt
1 cup yellow cornmeal
3 tablespoons butter (melted)
IA cup Brinza
Boil water and salt and gradually add
cornmeal stirring until thickened, cook-
ing over medium heat. Butter an eight-
inch pan and pour cooked cornmeal
into it. Chill until firm. Cut into
slices about two inches thick. Butter
a baking dish, arrange mamiliga in
layers sprinkling butter and cheese
between layers and on top. Bake 20
minutes in 375 degree oven.
Variation: If Brinza is unobtainable
use Farmer Cheese or grated swiss
cheese.
