SAMMY WOOLF Fish was an important ingredi- ent in the Jewish kitchen of the European Ghetto. A Friday night meal, if one could but manage it, was unthinkable without fish. In- deed its importance did not dimin- ish even the next day when the left-overs could be eaten cold. In fact is was so prominent a part of holiday feasting that often the chore of selecting the fish was a matter that the rich "Baale bos," the master of the house, would not entrust to a mere female. By go- ing to the fish market himself the "Gvir" was thus assured of ob- taining a choice hecht (pickerel) or a sizable "Karpenkopf" befit- ting the social status of the "No. gid." The mother's hard work came later and she was rewarded by admiring comments about the flavor of the fish gravy. There were many ways of pre- paring fish, according to region and taste. What was delectable to the Jews of Warsaw, who liked their fish sweet, was anathema to the Litvak from Vilna who liked his fish, like his conversation, peppery. Here are two recipes for fish greatly honored in the "Shtetl." Refreshments will be served. There is no charge. Clean, filet fish the night before. Salt it. Reserve heads, skin and bones. Keep refrigerated. Slice two onions. Arrange in a four-quart pot with one quart of water, add fish bones, heads, sliced onions and skins. Grind fish, re- maining onion and almonds (if using same). Put in a wooden bowl. Add eggs, about 1/2 cup water, salt and about 1/4 teaspoon pepper. Mix thoroughly. Mold fish into patties using about 1/2 cup for each patty. Lower them gently into boiling water with heads, skin and bones and sliced onions (2). Put 2 carrots sliced into pennies on top of fish, add knob celery. Cover pot and simmer 2 1/2 hours. Add 1 teaspoon sugar if you de- sire and season to taste after on hour. Let patties cool in stock. Remove to platter. Put carrot slices on top of pat- ties. Strain sauce through a fine strain- er mashing onions and heads through. Serve hot or cold. If cold, it should congeal. About 8 portions. Garnish fish with watercress or parsley. Marinade of Fish 4 or 5 lbs. of fish (whitefish, salmon, salmon trout, pickerel, pike) 3 or 4 extra heads if possible 3 or 4 large onions 1 lemon cut in slices Salt, pepper to taste 1 tablespoon sugar 1 cup vinegar 12 bay leaves 5 allspice lemons sliced 2 or 3 lemons sliced Boil onions, heads, 1 sliced lemon and .1 cup water about 15 minutes. Add fish slices, salt, pepper to taste and sugar. Simmer about 1 hour. In an- other pot simmer 10 minutes 1 cup vinegar, bayleaves and allspice. Strain fish sauce into this. When fish is cold remove to a dish (deep), put slices of fish and slices of lemon In layers. Cov- er with sauce and use 3 days later. 7: H.
