Written by Dr. John Slawson,
AJC executive vice president, and
Lawrence Bloomgarden, director
of the AJC business and industry
division, the booklet notes that
more social and prestige clubs
have ended discriminatory policies
barring Jewish members during
the past five years than in the
previous 60 years of this century.

Jewish Meals

Chicken in the old Shtetl of East
European Jewry was a rare del-
icacy in which only the rich could
indulge. There are countless Yid-
dish folk-sayings to illustrate this
point. With that poignant yet rich
irony which was so characteristic
of the ghetto it was said, "When
a poor man eats chicken, one of
them is sick." Only on festive and
rare occasions, a holiday, or when
a dear one was desperately ill,
was a chicken served. This accounts
for the boundless faith Jewish mo-
thers had in its cure-all qualities.
There are countless ways to pre-
pare chicken. A favorite of my
mother's was Chicken Paprikash;
a recipe for which follows below.

Chicken Paprikash with Rice
3 lb. cut up frying chicken
1/2 cup washed rice
2 onions chopped
2 teaspoons paprika
1 teaspoon salt
1 tomato
1 cup water
2 tablespoons shortening
Melt shortening in a pot, brown
chicken and remove. Add chopped
onions and saute until transparent,
add rice and paprika and stew about
three minutes, stirring continuously.
Add water, chicken salt and tomato.
Cover and simmer 2-1/2 hours. Add
more water if necessary. Should have
little gravy.
. Stuffed Peppers
5 green peppers
1 /2 cup washed uncooked rice
1 lb. ground beef
1 egg
1 onion chopped
1 clove garlic mashed
1 teaspoon salt
1/2 teaspoon paprika
2 cups tomato juice
1 tablespoon shortening

Wash and cut off top of peppers. Re-
move seeds. Parboil them 10 minutes
in small amount of water. While pep-
pers cooling saute onions and garlic in
1 tablespoon shortening; in mixing
bowl, chop together meat, rice, egg,
onion, garlic, paprika, salt and stuff
peppers. Place in greased baking dish
with tomato juice around it. Cover
and bake in 350 degree oven one hour.
