The Winder Teachers' Institute
which commenced at the United
Hebrew Schools Thursday, will
continue today. Sessions are held
at the Esther Berman Branch.
The topics deal with the general
theme of what the community,
L--- )the home and the synagogue ex-
)pect from the Jewish school. The
speakers include Samuel Cohen,
)assistant director of. the Jewish
Welfare Federation; George Zelt-
zer, president of the schools; Nor-

2 Noteworthy Portraits
Published by Pantheon
Pantheon Books this week issued
two noteworthy additions to its
portrait library, biographies of dis-
tinguished world figures.
Jeanne Carbonnier is the author
of "A Bar-Surgeon: A Life of
Ambroise Pare, Founder of Mod-
em Surgery." Joseph Cellini illus-
trated the volume.
"The Lantern Bearer: A Life-
of Robert Louis Stevenson," by
James Playsted Wood, was illus-
trated by Saul Lambert.
The Pare story will interest not
only teen-age readers for whom it
was written, but elders and espe-
cially physicians who will find in
it a great deal of historical mate-
rial about surgical development.
The Stevenson biography is a
well written account about a talka-
tive fellow who created sensations
with his poetry and stories.

Our tastes change. Not too long
ago plumpness was preferred. We
considered a bit of avoirdupois a
sign of success in men and pulchri-
tude in women, and a generous
padding of fat a sign of quality in
children and meats. Today that
extra fat is considered neither
healthful nor attractive. We like
people lean and our meats almost
fat free:
Now duck is a fat fowl, and if
we like, we can prepare it so
that much of the fat remains. But
to please our present-day tastes,
we usually prefer duck cooked so
that the flesh is soft, juicy and
tender, yet free of the visible fat
and oiliness we dislike. For this
purpose tart apples and citrus .
fruits and juices are frequently
added. In addition, their flavor
blends so well with the meat that
they add an extra goodness to the
completed dish.
Two recipes for r oast duck
which becomes super-good with
the addition of fruits are describ-
ed today. Duckling with Kum-
