Chicken may replace the turkey. TURKEY-PIMENTO PUDDING 1 1/2 cups tightly packed white bread cubes 2 cups coarsely mined cooked turkey 1 cup turkey broth cup minced celery 4 teaspoons minced parsley 2 teaspoons parve chicken-flavored soup powder 2 eggs, slightly beaten 2 teaspoons lemon juice 1 medium-small onion, minced IA cup finely diced pimento Salt and pepper to taste Cut the bread into cubes about 3/4-inch in size. The crusts may be used. Com- bine all ingredients lightly but thor- oughly. Pour into a greased 1-quart baking dish which can be brought to the table. Refrigerate at least 30 minutes to allow the bread to absorb the liquid. The pudding may be mixed early in the day, if desired. Bake at 350 degrees F. about 1 hour, until firm and well- browned. Serve with any desired sauce. This amount makes 4 to 5 portions.
