Noted in Israeli Exports
JERUSALEM (JTA) — A minor
rise in real estate prices, a sub-
stantial rise in industrial prices
and an increase in Israel's foreign
currency reserves were among the
highlights of the Bank of Israel's
periodical economic survey.
The survey showed that, in the
first quarter of this year, 13,000
new apartments were built in Is-
rael, and that prices of real estate
rose by only four per cent from
October 1964 to March 1965. Out-
put of citrus fruits rose by 15 per
cent, and exports by 20 per cent,
compared with the slump season
of last winter.

Spices are parts of aromatic
plants which are grown in the
tropics. Herbs are the leaves of
aromatic plants which are grown
in temperate zones. The aromatic
seeds are the fruit or seeds of
herb plants. All of them share
in creating the flavor which turns
dull food into delicious and ima-
ginative dishes. The word spices
brings to mind adventure and the
fairy-tale wonder of far-off places,
while herbs seems to connote
friendly, sheltered gardens.
Next time you visit your food
market, stop for a few minutes at
the spice section. Notice the large
assortment; read the list of names.
Only a generation ago, in most
grocery stores, the section would
have been part of a small shelf,
and the list of herbs and spices
only about a dozen or so. If you
wanted oregano, coriander or
cumin, you would have had to
purchase them at a specialty shop
or one of the great metropolitan
department stores. Today these
seasonings are in everyday use.
In addition to single spices we
also have a large variety of spice
mixtures. Some of these, such as
curry and poultry seasoning,
which are blends of many spices

Since so many dishes depend for
their goodness on subtle blends of
very small amounts of several
herbs and spices, having all of
them so easily available, both in-
dividually and as mixtures, makes
epicurean cooking ever so much
easier. Our two recipes demon-
strate the magic which a blend of
spices and herbs can produce in
simple, everyday dishes. Apple-
sauce turns into a stop-the-show
relish with the addition of mixed
pickling spice, and plain baked
chicken becomes a subtly seasoned
Oriental treat when we rub it with
a blend of seasonings of our own
making.
SPICED APPLE RELISH
4 rounded cups cubed apples

SPICED CHICKEN, ORIENTAL STYLE
1 large whole frying chicken, about
3 lbs.
1 teaspoon salt
1/2 teaspoon freshly ground pepper
1/2 teaspoon each: ground cloves,
ginger, cardamon, and coriander
1-16 teaspoon garlic powder
4 tablespoons soft parve margarine
T's cup finely diced onion
1 /4 cup finely ground almonds
Have the chicken prepared for stuff-
ing. Combine the salt, pepper, ground
cloves, ginger, coriander, and cardamon,
and the garlic powder. Blend thoroughly
into the margarine. Combine 2 table-
spoons of this blend with the onions and
almonds. Fill the chicken with mixture.
Fasten with poultry pins. Rub the re-
maining margarine blend evenly over the
entire surface of the chicken. Line a
shallow baking dish with aluminum foil
and place the chicken on its side on the
foil. Bake at 325'F. for 35 to 40 minutes,
until delicately browned. Turn over and
continue baking until the chicken is ten-
der, about 35 minutes longer. This
amount serves 4. The onion retains its
3/4 cup sugar

1 6-oz. can concentrated frozen grape
juice
1-16 teaspoon salt
1 1/2 tablespoons whole mixed pickling
spice
For best results select apples which
are firm and slightly tart, and which
will hold their shape as they cook. Peel
and core the apples and cut them into
1 /2-inch cubes. Heap the apples some-
what in the cup when measuring. Place
the apples, sugar , vinegar, undiluted
grape juice and salt in a 4-quart sauce-
