Place the water, salt, sour salt (cit-
ric acid), and sugar in a saucepan,
bring to boil, and stir until the sour
salt is dissolved. Add the spinach,
bring to a full boil, and simmer for
3 minutes. Remove from the heat and
chill until icy cold. Just before serv-
ing beat the egg until light and thick
and beat in the sour cream until
smooth. Stir into the borsht. Add lem-
on juice to taste, if desired. Serve in
bowls. To serve as a beverage, whirl
in a blender until smooth. This amount
makes from 244 to 3 cups of borsht.

cream and acid may be varied to suit
your own taste. If you like a highly
flavored sweet and tart taste, use the
maximum amount of sugar and addi-
tional lemon juice. For a creamy
borsht use the maximum amount of
cream. For a hearty dish, add a hot
boiled potato or a sliced hard cooked
egg.
