peaches
2 cups peeled, ground, firm-ripe
tomatoes
14 cup peeled, ground onions
1,‘.2 cup seeded, ground green pepper
1 ,2 cup firmly packed dark brown
sugar
1/2 cup granulated sugar
1 /2 cup white vinegar
Vs teaspoon dried, crushed red pepper
1 /:3 teaspoon salt
2 tablespoons whole mixed pickling
spices
Use fully ripe but firm peaches and
tomatoes. Place all ingredients except
the mixed pickling spices in a heavy
4-quart saucepan. Put the spiceS in a
small cheesecloth bag and tie firmly.
Add to the other ingredients. Stirring
constantly, bring the mixture to a hard
boil, then lower the heat until the re-
lish bubbles very gently. Cook uncov-
ered about 1 hour, until slightly thick-
ened. Stir from time to time to pre-
vent sticking. Remove the spice bag
and pour the relish into small, steril-
ized jars. Seal, cool„ then store in a
cool dry place. This amount makes
about 4 cups of relish.

PEACH CONSERVE RELISH

About 16 medium peaches, slightly
under-ripe
1 cup seedless raisins
11:;2 cups firmly packed light brown
sugar
cup cider vinegar
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
2 teaspoons mustard seeds
cup coarsely chopped nut meats
Peel, pit, and slice enough peaches
to make 8 slightly rounded cupfuls.
Place is a preserving kettle and add all
the remaining ingredients except the
nuts. Bring to a boil, then lower the
heat until the mixture bubbles gently.
Cook, uncovered, for about 45 min-
utes, until the relish becomes slightly
thickened. Stir frequently and scrape
the bottom as you stir to prevent stick-
ing. Add the nuts and cook for 2 min-
utes longer. Fill 6 hot, sterilized %-
pint jars, or 3 pint jars, and seal. Store
in a cool, dry place.
