Music" 9 p.m. today.
Represented will be Jewish
melodies spanning in time from
the 15th Century to the present,
including folk songs, freedom
songs, liturigical music and the
works of modern composers.
Presenting this program will be:
Shirley Benyas, soprano; Anna
Jaffe, mezzo-soprano; Leo Mogill,
tenor; Sidney Resnick, baritone;
and Bella Goldberg, accompanist.

Dumplings, knodels, kneidlach,
olchies, or holchies — no matter
what we call them, these little
rounded masses of cooked dough
have a special place in our affec-
tions. We may roll them, fill them,
form them into balls, or use spoon-
fuls of batter. We may bake them
along with a tzimmas, simmer them
in water for soups, side dishes, or
desserts; or cook them in the soup
or in sauces. In fact, we may enjoy
a large variety of these maichulm,
from our indispensible matzo meal
kneidlach to such less well-known
delicacies as the Applesauce Kneid-
lach described today. Since dtun-
plings are so varied, we find that
some are light as air, others quite
firm in texture. But no dumpling
worthy of the name should be
doughy, heavy, or soggy. With a
proper blend of ingredients and
the correct method of cooking, all
dumplings can be appetizing and
digestible.
Potato Olchies were one of the
joys of our childhood. On cold
wintry days, when the snow piles
at the sides of the streets were
higher than our heads, a lunch of
hot milk soup with Potato Olchies
sent us back to school so fortified
that we felt capable of climbing
over all the pile s as if they were

POTATO OLCHIES
1 cup finely grated raw potatoes
1 cup boiling water
1/2 cup fine, dry breadcrumbs
34 teaspoon double-acting baking powder
1 teaspoon salt
1/8 teaspoon ground nutmeg
1 teaspoon grated onion
1 well-beaten egg
Two to 21/2 medium-sized potatoes will
give the correct amount needed. Place
the grated potatoes in a medium-size
sieve and poui- the boiling water through
them. Press out any excess liquid. In a
mixing bowl combine the bread crumbs,
baking powder, salt, and nutmeg. Stir
in the potatoes and onion, and blend
well. Blend in the egg. Form into f-
inch balls. Drop into a large saucepan

Olchies have a wonderful flavor
which makes them among the most
delicious of all dumplings, but it
must be admitted that all too often
they are heavy. However, with the
recipe printed below we can get
olchies so light and fluffy they
barely hold together. The secret is
the use of breadcrumbs in place of
flour. These Potato Olchies, when
refrigerated overnight and reheat-
ed, are almost as good as when
freshly made, but they cannot be
frozen.
The Applesauce Kenidlach are
delicious as a simple dessert or side
dish .in place of a kugel. These
must be eaten as soon as they are
ready, as they do get heavy on
standing.
