Yeshiva U. Chef
Tells Purim Recipe

Purim is one of the happiest,
noisiest and tastiest holidays on
the Jewish calendar. A Purim deli-
cacy traditional with the holiday
is a triangle-shaped cake called
"Hamantaschen." Haman derives
from the name of the evil prime
minister and taschen derives from
the German word "pockets."
Alfred Parker, chief chef at
Yeshiva University in New York,
and an authority on Jewish cook-
ing, says that the triangle shape
of the cakes is most likely due
to the old-fashioned three-cor-
nered hat worn by government of-
ficials in early times. Haman, him-
self, could have worn such a hat.
Parker also volunteered his re-
cipe for the tasty cakes whose
preparation he will supervise for
some 6,000 Yeshiva University stu-
dents at the school's three cafe-
terias.

HamantaUchen
12 lb. sugar
1 lb. fat or margarine
11/2 lb. flour
2 large eggs
1/2 teaspoon salt
1 teaspoon vanilla or lemon
1 teaspoon baking powder
36 ounces Hungarian prune filling or
Poppy seeds
Mix the sugar, fat and flour, work
in eggs and flavoring to make the
dough. Refrigerate for 1/2 hour. Roll
dough into round shapes, then fold
edges in to make triangle shaped bis-
cuits. Into centers place 1 oz. Hun-
garian prune filling or poppy seeds
(with raisins and nuts if desired.)
Bake in pre-heated oven at 350 degrees
for 25 minutes.
Yield: 36 hamantaschen.
