water in a 2-quart saucepan. Bring to
a boil. and add the carrot. Cook until
the peas are very tender and the water
is absorbed. Cool. Blend in all remain- i
ing ingredients, except fine bread
crumbs or matzo meal. For best results
remove the crusts before cutting the
bread. Use butter with the milk, and
margarine with the soup. Grease a one-
quart baking dish which can be
brought to the table. Coat the interior
generously with bread crumbs or matzo
meal. Pack the split pea mixture firmly
into the pan. and bake at 350 degs. F.
for 1 hour, until firm and light brown.
Serve with tomato or mushroom sauce.
As a main dish this recipe makes 4
portions; as a vegetable, 5 to 6.
