Acting Class to Perform at Center Theater Session

Jewish Meals

Stuffed Breast of Veal is one of
our favorite dishes, and like many
another f a v or it e is made with
numerous variations. We find it
filled with dressings of every type
—kashe, potato kugei, rice, meat,
and fruit are as well-liked as bread.
Different seasonings are preferred
by different cooks. Even the meth-
ods of roasting differ. Those who
like the meat firm and easy to slice
bake the veal uncovered. For soft
and juicy meat, housewives pre-
pare it in the manner called "Jew-
ish style," with the pan covered.

examples of these different fillings,
seasonings, and roasting methods
have one unexpected ingredient in
common. In both stuffings, which
incidentally may be substituted for
potatoes, grated raw carrots adds
fine flavor as well as flecks of
golden color. The first recipe has
a -traditional bread stuffing, is
made in the "Jewish style," and
acquires its extra-good flavor from
canned tomatoes. The second is
filled with an unsweetened rice
kugel. is roasted uncovered, and is
basted frequently to keep the meat
delectably moist.

BREAST OF VEAL WITH OLD-
FASHIONED BREAD STUFFING
I breast of veal. about 3-. 4 lbs.
5 cups tightly packed white bread
cubes
I cup water
1 teaspoon poultry seasoning
1 teaspoon salt
1 cup canned tomatoes
1 stalk celery diced
1 medium-large onion, finely diced
S tablespoons chicken fat
1 medium carrot, grated
1 egg, well-beaten
Pepper to taste

Have a pocket cut In the veal for
stuffing. Place the bread cubes in a
large mixing bowl and add the water.
poultry seasoning. and 1,4 teaspoon of
the salt. Stir to mix, then let stand
•until the bread is evenly moistened.
Meanwhile, cook the onion and celery
in 3 tablespoons of the fat until soft
but not brown. Add to the bread. to-
gether with the carrot and egg. Stir
until thoroughly blended. Sprinkle the
veal. both the surface and inside the
pocket, with the remaining salt, and
pepper to taste. Fill with the stuffing.
but do not pack tightly. Any extra
stuffing , may be put into a small
greased casserole. and baked for 30
minutes. Sew up or close the opening
of the pocket of the breast of veal with

Place the meat on the rack of a deep
roaster and spread the remaining fat
over the top surface. Pour the canned
tomatoes over the top. Cover the pan
tightly, and bake the veal for about 2
hours. until it is very tender. Remove
the thread or pins and string, and
serve with the pan gravy and extra
stuffing. To carve, cut between the
bones. This amount makes 6 to 8 por-
tions.

BREAST OF VEAL STUFFED WITH
RICE KUGEL
to 4 lb. breast of veal
1
1 egg
teaspoon ground ginger
1 teaspoon salt
Is teaspoon pepper

1 tablespoon grated onion
2 tablespoons melted chicken fat
11 ,:i cup seedless raisins
3 cups cold. cooked rice
1 cup water or chicken soup
Have the butcher cut a pocket in the
breast of veal. In a mixing bowl beat
the egg, s teaspoon of the ginger,
teaspoon of the salt, and 1/16 teaspoon
of the pepper, until the egg is light.
Add the carrot, onion, parsley, and 2
tablespoons of the fat. Beat to blend,
then stir in the raisins and rice until
evenly mixed. Fill the pocket —of the
veal breast loosely with part of the
rice kugel, and place the rest in a
small greased casserole. Sew up or
close the opening of the pocket with
thread or poultry pins and string. Rub
the remaining salt, pepper, and ginger
into the top of the veal. Place the
water or chicken soup in a large, shal-
low roasting pan, put a rack in the
pan, and set the meat on the rack.
Spread the remaining fat evenly over
the top of the veal. Bake. uncovered,
at 325 degs. F. about 45 minutes to the
pound, until the veal is well-done and
tender. Baste every half hour with the
liquid in the pan. During the last 40
minutes, add the casserole of rice and
bake. covered. . Serve the meat with the
pan gravy. additional rice in the cas-
serole, and cranberry or apple sauce.
This amount serves 6 to 8.
