OLIVE-MACARONI CASSEROLE
21/2 cups small-sized cooked elbow mac-
aroni
1 cup- sliced, canned pitted ripe olives
1/2 of a large green pepper, diced
2 cups diced cooked chicken or turkey
1 101/2 oz. can tomato and mushroom
sauce
I tablespoon minced onion
About 1 teaspoon chili powder to taste
In a well-greased 6-cup casserole
place about 11/2 cups of the cooked mac-
aroni elbows. These are sometimes
called elbow spaghetti. Slice the olives
before measuring. Arrange the olives,
green peppers, and chicken or turkey
in layers over the macaroni. Top with
the remaining macaroni. Combine the
tomato and mushroom sauce, the onion,
and the chili poWder to taste. Pour
evenly over the macaroni, and let the

To prepare the olives. drain thor-
oughly, slice each one, then cut each
slice into quarters. Measure after cut-
ting. In a very heavy two-quart sauce-
pan melt the shortening over medium
heat. Add the rice, onion. and green
pepper, and stir until the shortening
begins to turn a light brown, about 5
minutes. Add the olives and remaining
ingredients. Stir until the mixture boils,
then lower the heat as much as pos-
sible. Cover the pan tightly, and cook
about 25 minutes, until the liquid is
absorbed and the rice is tender. Stir
occasionally to prevent sticking. No salt
is suggested as there is usually enough
provided by the olives. If you wish to
add salt, about 1/2 teaspoon should be
sufficient. This amount serves 5 to 6.
