This Weekend on
a Musical Note

VEAL WITH ORANGE-
MUSTARD GRAVY

The 13th annual Book Fair
comes to a close this weekend with
an "Evening of Yiddish Humor
and Song" at the Jewish Center.
Shmuel Fisher, Israeli humor-
ist, and folk singer Fraidele Lips-
hitz will present their music com-
edy program 8:30 p.m. Saturday
under the sponsorship of the
Hebrew-Yiddish Committee. co-
chaired by Mrs. Morris Friedman
and Morris Nobel.

3 to 31/2 lb. boned and rolled shoulder

1-tablespoon vegetable oil
1 teaspoon salt
lib teaspoon pepper
1 teaspoon grated orange peel
lic2 teaspoon dry mustard
1/4 teaspoon powdered thyme
2 tablespoons honey
1 to 3 tablespoons prepared mustard

Rub evenly into the meat. Place the
meat on a rack in a deep roaster and
bake. covered, for one hour at 350
degrees F. Meanwhile blend the honey
and prepared mustard. The amount of
mustard used depends on whether you !
wish the mustard or orange taste to
predominate. Gradually stir in the
orange juice. When the meat is ready.
remove the rack and pour the sauce
over the meat. Cover the pan and con-
tinue roasting about 11/2 hours longer.
until the veal is tender. The gravy ,
may be served as it is or thickened
with a tablespoon of flour dissolved
in 3 tablespoons cold water. Add to
the gravy and cook and stir for 5
minutes over medium heat. This
amount serves 8-10.

From a practical point of view

manuscript to indicate that his
writing is finished and that noth-
ing that would chance to be
written after this abbreviation
would be considered his responsi-
bility. Furthermore, it was a means
of expressing thanks to the Al-
mighty for allowing him to
complete the manuscript. The
abbreviation stands for the words:
"Wholly completed, praise to God
who created the world." This also
has been taken to mean that the
author regards the literary work
of man to be a praise of the
Almighty who created him and
blessed him with the talent of
writing.
