Cut the meat of the tongue into 1-inch cubes. Scrape the carrots and cut into 1/2-inch cubes. Place the tongue, carrots, and all re- malrdng ingredients in a greased cas- serole. Cover tightly and bake for 1 hour. Stir once at the end of 30 min- utes. At the end of the hour of baking time the liquid should be almost en- tirely absorbed and the carrots tender crisp. This amount makes 12 portions, but the recipe can be prepared for 6 by using half the amount of each ingre client.• The baking time is the same. DATE-NUT TORTE 2 cup boiling water 1 cup pitted dates, cut small 2 tablespoons butter 1 cup sugar 1 egg 11/2 cups sifted an-purpose flour 1 teaspoon baking soda 1/2 teaspoon salt I, cup walnuts or pecans, chopped - medium fine I pint whipping cream 2 tablespoons confectioners' sugar J. tablespoon vanilla extract Pour the boiling water over the dates, stir to mix thoroughly, and cool. In a mixing bowl cream the butter and sugar. Add the egg and beat well. Add the date mixture. Sift the flour, baking soda, ana salt together, and stir into the batter. Add the nuts. Pour into 2 greased and floured 8-inch layer cake pans, and bake at 325 degs. F. about 30 minutes, until delicately browned, and a cake tester inserted in the center comes out dry. Invert on racks. and invert again after removing the pans, so that the cakes cool with top up. Cool completely. Whip, the cream, confectioners' sugar, and vanilla until thick. Put the layers of the cake together with a generous layer of the cream and spread the rest over the top and sides. Refrigerate at least One hour before serving. The torte is most attractive garnished with chopped nuts and maraschino cherries. This may be kept refrigerated for 26 hours. The cake serves 8-9.
