MENU FOR SUKKOT DINNER Wine for Kiddush Twin Hallas Mrs. Solman's Brisket Recipe Twii Halios Pic ed Fish Flu en ' Carrot Tzimmas Sweet Mixed Pickles Small Bowls of Honey Harvest Soup Baked Potatoes Olives Tea or Black Coffee • • ‘ r • HARVEST SOUP 21/2 lbs. round-bone chuck in one piece 2 medium onions, diced 3 large stalks of celery with leaves 2 teaspoons salt 7 cups water 1 1-lb. can tomatoes 1 cup canned tomato sauce 1/2 cup pearl barley 1 10-oz. package frozen mixed vegetables Pepper to Taste • • • Place all ingredients except the frozen mixed vegetables in a large soup kettle. Bring to boil. then sim- mer covered. until the meat is tender. about 21/2 hours. Stir the soup and scrape the bottom from time to pre- vent the barley from sticking. Remove the meat and celery. Add the frozen vegetables, bring to boil. then simmer until the vegetables are tender. about 15 minutes. Stir occasionally, as the soup is rather thick. Add pepper to taste 'and more salt if desired. The recipe' makes about 9 cups of soup. Any not used may be frozen. If the soup is made in advance it becomes very thick and may be thinned with beef broth. The meat has a delicious flavor and may be used as the main dish of another meal. • • • MRS. SOLMAN'S BRISKET RECIPE Select a piece of single brisket and have all visible fat removed. The meat should weigh about 3 ,4 lbs. after it is trimmed. Spread 1 2 of an envelope of kosher, onion soup mix evenly over the top. Roll up the meat and tie to hold in shape: Wrap in heavy-duty aluminum foil. Leave a little space for air, but seal the ends tightly. Bake, in a shallow pan. at 325 degs F. for 3 hours. Serve hot with the natural gravy which forms in the foil. This meat is also delicious sliced cold. The recipe makes about 10 portions. • • Weil/garden-Pearlman Betrothal Announced Walton H. Add the oil, eggs, and enough water to make a soft dough. Stir only until the ingredients are blended. Divide the dough into 5 pieces, 4 of which are the same size. and the fifth piece about larger than the others. Roll the larger piece into a 12 , :2-inch square and line an 8x8x2 inch cake pan with it. Press the dough smoothly against the sides. It will extend slight- ly above the rim: Combine the re- maining cup of sugar with the cin- namon. Sprinkle 1/5 of this mixture and 1/2 of the walnuts evenly over the bottom. Roll out another piece of dough into an 8x8 inch square. Place this over the first piece. On it spread !;,, of the jam and coconut, and another 1/5 of the sugar-cinnamon mixture. Rob out the third piece of dough. 8x8 inches in size. and place this in the pan. Cover with an even layer of apples and raisins. Use all of them. Sprinkle another 1/5 of the sugar-cinnamon over the surface. Roll out the fourth piece of dough into an 8x8 inch square. place it in the pan. and on it spread the remaining nuts. jam..and coconut and sprinkle with another 1/5 . of the sugar-cinnamon. Sprinkle with the sugar- cinnamon mixture. Bake at 350 degs. F. about 'hours, until the pastry is a rich brown. Cool in the pan. To serve. cut into squares of any desired size.
