over medium heat, and in it broWn
the pieces of chicken and the onion
lightly. As they brown. place them in a
large baking dish. When all are
browned, put the tomato sauce, brown
sugar. prunes, and the cup of reserved
prune liquid in the skillet. Stir to
blend. bring to a boil. Pour over the
chickens, cover the baking pan. and
bake for I hour. Add the sweet po-
tatoes. and continue baking about 20
minutes longer. until the chicken is
tender. This tzimmes may be prepared
in advance and reheated. The recipe

2 10-oz. packages frozen cauliflower.
6 tablespoons chicken fat, melted.
1 cup matzo meal.
2 hard-cooked eggs, chopped fine.
14 teaspoon paprika.
1/2 teaspoon salt.
teaspoon pepper.
3 tablespoons chicken soup.
Cook the cauliflower until tender-
crisp. then drain thoroughly. Combine
the chicken fat, matzo meal, egg. pa
prika, salt. and pepper. Place half the
cauliflower in a well-greased 5-cup
casserole and cover with half the mat-
zo meal mixture. Add the remaining
cauliflower. then the remaining meal
mixture. Spoon the soup over the sur-
face. Cover the casserole and bake at
350°F. about 30 minutes, until thorough-
ly heated. This amount serves 8.

2 cups sugar
I cup vegetable shortening.
1/2 cup hot water.
21/2 cups sifted all-purpose flour.
3 teaspoons double-acting baking pow-
der.
1 teaspoons baking soda.
1 teaspoon ground cinnamon.
1/2 teaspoon salt.
Jam for spreading between , the layers.
Grease 2 deep 91/2 inch layer cake
pans. and line the bottoms with waxed
paper. Prepare the carrots and walnuts
before beginning to mix the cake.
Cream the sugar. shortening, and eggs
until light and fluffy. Stir in the car-
rots and nuts. Scald the water, then
pour into the measuring cup to cool
slightly, as you sift the flour, baking
powder, soda, cinnamon, and salt to-
gether. Alternately add the flour mix-
ture and the water to the batter, about
a third at a time, and stir just enough
to blend. Pour the batter into the
prepared pans and bake at 350°F. about
40 minutes, until a light brown, and
a cake taster inserted in the center
comes out dry. Partly cool in the pans,
then invert on racks and remove the
paper. Invert again and complete the
cooling on racks. Put the layers to-
gether with jam as a filling. This cake
is very rich and can be served without
a frosting, with confectioners' sugar
sifted over the top instead. Should you
wish to frost it, a parve' mocha icing
would 'be very good. When you serve
the torte with dairy foods, a topping
of whipped cream instead of the con-
' fectioners' sugar or icing is delicious.
The recipe makes a high 9-inch cake,
and will serve 10 generously.
