State Fair Is Expecting

200,000 Teen-Agers

The spotlight will be on music
and fun at the 1964 Teen Age Fair,
which will be a feature of the 115th
annual Michigan State Fair, Aug.
28 through Sept. 7.
The $3,000,000 "fair within a
fair" is expected to attract more
than 200,000 teen-agers. It will
spread across three acres adjoin-
ing the midway.
More than 50 of Michigan's love-
liest girls will participate this year
in the annual Michigan State Fair
Beauty Queen Contest.
Since the winner will be a
"queen of queens," organizations
sponsoring beauty contests in the
state were reminded that the entry
deadline is Friday, Aug. 21.
A contestant must have won a
sponsored beauty queen contest in
Michigan between Sept. 3, 1963,
and Aug. 21. 1964, to be eligible
for the State Fair event. All con-
testants must be unmarried and
between the ages of 16 and 25.
The contest will be held in the
Music Shell on the Fairgrounds at
8 p.m. Monday, Aug. 31, and 8 p.m.
Tuesday. Sept. 1. In addition, all
entrants are invited to participate
in the Grand Opening Parade of
the State Fair in downtown De-
troit, starting at 8 p.m. Friday,

BRAIN APPETIZER,
ROMANIAN STYLE
1 lb. calf's brains
2 tablespoons chicken or goose fat
2 tablespoons all-purpose flour
1 tablespoon minced onion
1 cup chicken soup

1 tablespoon confectioners' sugar

Pre-cook the brains for 10 minutes
in boiling salted water to which a
tablespoon of vinegar has been added.
Drain, and remove the heavy mem-
branes. Cut the meat into 1/,,-inch
cubes. In a saucepan melt the fat, and
stir in the flour and onion. Cook over
medium heat until light brown. Stir in

ingredients except the brains. and
simmer for 10 minutes. Add the brains
and simmer 10 minutes longer, uncov-
ered. Serve in patty shells or on toast

serves 5 to 6.

4 tablespoons chicken fat

3 tablespoons chicken soup
2 eggs seperated
salt and pepper to taste

Bread crumbs for coating
Parboil the brains for 10 minutes in
boiling salted water to which one
tablespoon of vinegar has been added.

small saucepan over medium heat melt
one tablespoon of the fat, stir in the
flour, and when it bubbles, stir in the

thoroughly. Form into 12 rather small
patties. Roll in crumbs. Beat the egg
whites until frothy. Dip the patties

medium heat until golden brown.
