Remove from the heat, and thoroughly blend in the almonds. salt, sugar and cinnamon. Stir in the milk, return to the heat, and stir for 5 minutes, until smooth and thickened. Scrape the bottom as you stir to prevent the pud- ding from sticking. Pour into an oiled 3-cup mold and cover the surface with waxed paper. Chill. Unmold and serve with whipped cream. In a one-quart saucepan combine the milk, farina, and sugar. Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil. Scrape the bottom as you stir to prevent the pudding from sticking. Stir in the salt and butter. As soon as the butter has melted and blended into the farina mixture, remove from the heat. Add a few spoonfuls of the pudding to the slightly beaten egg yolks, blend well, then stir this into the main part of the mixture. Return to the heat, and stir for one minute. Remove from the heat again, and stir in the vanilla. Beat the egg whites stiff and fold the pud- ding into them. Pour into a wet one- quart mold, and cover the surface with waxed paper. Chill until firm. Unmold and serve with stewed fruit, or sliced fresh strawberries or peaches. For a richer dessert, add a topping of whip- ped cream.
