Studies Oldtime War Vets The last of America's volun- teer armies — veterans of the Spanish-American War, Boxer Rebellion and Philippine Insur- rection—will be the subjects of a nation-wide study to deter- mine their use of medical facili- ties. The study, to be conducted by Brandeis University's Florence Heller Graduate School for Ad- vanced Studies in Social Wel- fare, has been commissioned by the Veterans Administration. It will try to assess, among other things, the costs of supplying medical facilities for these vet- erans, whose average age is about 90, in order to plan for younger veterans of other wars. The study, involving some 3,000 of the 22,000 veterans still living, will be conducted nation- ally through personal inter- views, medical examinations of about 20 per cent of the parti- cipants, and analysis of V.A. files, which date to 1899. . Cut the trimmed meat into pieces about 1 1/2 inches in size. Blend the flour with the salt and pepper, and roll the pieces of lung in this to coat. Heat the oil in a 4•quart saucepan, add the pieces of meat and the onion, and cook over medium heat until lightly browned. .Add all remaining ingre- dients, bring to a boil, then simmer, covered, for 3/4 hour. Taste and add salt, pepper, sugar, or lemon juice as desired. Serve sprinkled with minced parsley. This amount serves 5. GEDEMPTE LUNGEN 1 medium-sized pair veal lungs 2 tablespoons chicken fat 2 large onions, sliced 1 green pepper, _cut into strips 5 small whole carrots, scraped . 1 tablespoon dark brown sugar 1 large stalk celery, cut into 1-inch pieces 1 8-oz. can tomato sauce 1 4-oz. can mushrooms, sliced 1 teaspoon salt Vs teaspoon pepper 1 /2 teaspoon powdered thyme Remove the coarse membranes, large veins, and gristle from the lungs, but leave the meat in large pieces. Melt the fat in a heavy 4-quart saucepan, add the onions, and cook over medium heat until the onions are light brown. Add the lungen and brown on all sides. Add all remaining ingredients, cover the pan tightly, and bring to a boil. Lower the heat and simmer about 1 1/2 hours, until the lungen is cooked through. Slice, or cut the lungen into individual portions, return to the gravy and serve. The recipe makes 5 portions. Mashed potatoes, rice, or noodles are all delicious with it.
