to Chopsticks Invading Jewish Homes

Dedicated "To Grandmother
Slipakoff who held her first pair
of chopsticks at eighty," Ruth
and Bob Grossman now are
proudly presenting their book,
The Chinese-Kosher Cookbook,"
published by Paul S. Erksson,
Inc., (110 W. 57th, NY19).
With all the recipes authenti-
cated by Rabbi Norman Siegel
of the Kings Highway Jewish
Center, Brooklyn, N. Y., the au-
thors relate how Ruth's grand-
mother concocted a Chow Mein
for a Friday night meal. Grand-
mother Slipakoff, they explain,
now 82, has a favorite saying-
"az men lebt derlebt men," —
"if you live you see eveything"
—and with her skill as a cook
she developed her grandchil-
dren's favorite dishes to be
kosher. So, they write in their
preface to this cookbook:
"We still enjoy the tradi-
tional Jewish dishes we grew
up with . . . but we know the
world of Jewish cooking will
never be the same. We thought
we'd truly seen everything,
until one day: Grandma asked
us to take her to Chinatown
. . . and there, as we stood in
back of a little shop with our
mouths open in amazement,
Grandma Slipakoff bought
two pairs of chopsticks . . .
one FLEISCHIG . . . and one
MILCHIG!"
That's how it began. To prove
the kosher side of their under-
taking, the authors preface their
book by quoting Deuteronomy
XIV:
"Thou shalt not eat any
abominable thing .. .
"And every beast that part-
eth the hoof, and cleaveth the
cleft into two claws, and chew-
est the cud among beasts, that
ye shall eat .. .
"These ye shall eat of all
that are in the waters: all that
have fins and scales shall ye
eat . . .
"Of all clean birds ye shall
eat . .
"But these are they of
which ye shall not eat: the
eagle, the ossifrage and the
osprey . . . and the glede, and
the kite, and the vulture after
his kind,
"And every raven after his
kind .. .
"And every creeping thing
that Meth is unclean unto
you: they shall it be eaten .. .
"But of all clean fowls ye
may eat .. .
"Ye shall not eat of any
thing that dieth of itself . . .
thou shalt not seethe a kid in
his mother's milk . . . "
These rules are followed care-
fully in the Grossmans' "Chi-
nese-Kosher Cookbook" which
includes an essay on things to
know about Chinese cooking and
an explanation on the use of
chopsticks.
The recipes include Forsh-
peis, Soups, Rice-Egg and Mat-
zoh Dishes, Vegetables, Fowl,
Meat and Desserts.
A typical recipe, which the
authors have themselves select-
ed for the jacket of their book,
is "Far Blun Jed Egg Drop
Soup", explaining: "FAR BLUN
JED is what a Jewish mother
calls her son when he wants to
join the Peace Corps instead of
becoming a doctor." The recipe:

2 cups nice chicken broth
I tablespoon soy sauce
A pinch salt or two
A teaspoon MSG
I nice fresh egg
A little handful watercress
2 teaspoons cornstarch
2 tablespoons water
In a pot you'll heat the broth to
a boil. Then add the soy sauce, salt
and MSG. Make a thin mixture of
the cornstarch with the water and
add this to the soup and cook until
it thickens slightly. Next you can
beat the egg and add it to the soup
very slowly; all the time you should
mix. Take it off from the fire, and
the watercress and serve.

There is a page in the book
entitled "Pork"—and next to it
Grandma, hands folded, adjur-
ing: "You should bite your
tongue!"

sult of this cookbook. There
even are listed Chinese dealers
from whom some of the prod-
ucts used in Chinese dishes—
duck sauce, hot dry mustard,
sprouts, chestnuts, bamboo
shoots—can be ordered, and the
Michigan firm suggested is De-
troit's Lun Yick Co.
