SCHAVER AUDITORIUM, Labor Zionist institute Distinguished Guest Vr 4 By Request: Lekach, Honey Cake Recipe In response to a request from a reader, we publish the follow- ing recipe for Honey Cake — Lekach: 4 eggs, 1/2 cup coffee or 6. eggs 1 cup sugar 1 cup honey 2 tablespoons oil 1 /2 cup raisins cup chopped walnuts 1 /4 cup chopped mixed fruit % teaspoon all spice 1/2 teaspoon cinnamon 1 teaspoon cloves 2 teaspoons apricot brandy 1 teaspoon baking soda 1 1/2 teaspoons baking powder 3% cups flour If a spongier cake is preferred, use the six eggs and omit coffee. However 4 egg cake is delicious. Beat eggs well, add the sugar gradually and continue beating until light. Stir in the honey, the oil, coffee, and then the rest of the ingredients. Sift the flour, baking powder, soda together and add last. Pour into a paper-lined and oiled pan and sprinkle a few blanched halved almonds on top. Bake in a slow oven (310 degrees) for one hour.
