Each year when we go shop-
ping for Passover we find more
and more products for our use.
So many Kosher for Passover
fresh, frozen, canned, packaged,
and baked goods are on display
that we could, we wished, pre-
pare menus for the entire holi-
day that lacked only bread to
make them seem just like otru.

In contrast to this, unless you
yourself are old enough to re-
member the Passovers of the
past, it is difficult to realize how
few foods there were until re-
cently for our use during the
holiday. If you wanted milk, you
went to a Jewish farmer whose
cows had been specially fed, and
he would milk directly into your
own container. Pasteurization
was unheard of or ignored.
Sugar was purchased as a large,
hard cone which had to be bro-
ken and grated before it could
be used, and there were almost
no packaged foods except matzo
and its products. While bakers
did have cakes and macaroons
for sale just before the holiday,
by its end these were so hard
and stale they had to be con-
verted .into puddings to be edi-
ble. Well-balanced meals were
well-nigh out of the question,
and repetitious ones only too
common. If ever necessity had
to be the mother of invention it
was during Passover, but as
usual, among our Jewish house-
wives there were many who were
more than equal to the chal-
lenge. With skill and imagina-
tion they devised so many deli-
cious dishes of matzos and matzo
products that each year their
families awaited the appearance
of these specialties as an in-
dispensable part of Passover.

Fresh asparagus
Kosher for Passover
Canned Fruit Cocktail
Tossed salad with Passover
mayonnaise
Passover veal chops Savory matzos
Fresh asparagus
Passover carrot shalet
Black coffee or tea
PASSOVER VEAL .CHOPS
5 portions veal chops
Salt and pepper
1 cup matzos meal
2 eggs
2 tablespoons cold water
4 tablespoons Passover peanut oil
1 large onion, peeled
1 green pepper, seeded
2 101/2-oz. cans Kosher for Passover
tomato and mushroom sauce
Paprika
Sprinkle the chops with salt and
pepper to taste. Dip them into the
matzo meal, then into the eggs
which have been slightly beaten
with the water. Now coat the chops
completely with the meal. Sprinkle
evenly with paprika. Heat the oil
in a large; over-proof skillet, add
the chops and brown on both sides
over medium heat. Cut the onion
into 5 crosswise slices and the green
pepper into 5 crosswise circles.
Place a slice of onion and green
pepper on each chop. Spoon the
sauce over all. Cover the skillet
tightly and bake at 350 degs. F.
about one hour, until the meat is
tender. This amount serves five.
SAVORY MATZOS
6 crumbled matzos
cup lukewarm water
3
6 tablespoons chicken fat
11/2 cups minced onion
3 beaten eggs
1 1/2 teaspoons Kosher for Passover
parve mushroom soup mix
1/2 teaspoon pepped
Salt to taste
Place the matzos in a bowl, cover
with the water, and soak until soft,
meanwhile heat the fat in a
medium-sized skillet, add the onion
and cook over low heat until the
onion is soft but not brown. Add
the onion and fat to the matzos.
Stir in the remaining ingredients
lightly but thoroughly. Return the
mixture to the skillet and cook over
medium low heat, without stirring,
for 10 minutes. Cover the skillet and
cook 10 minutes longer. Serve as a
substitute for potatoes. This amount
serves five.
PASSOVER CARROT SHALET
11/2 cups grated raw carrot
2 eggs
1 /2 cup firmly packed dark brown
sugar
1 /4 cup Passover peanut oil
1 teaspoon grated lemon rind
seedless raisins
1/2
1 cup matzo cake meal
1 tablespoon sifted potato starch
1 /4 teaspoon salt
1/2 teaspoon ground cinnamon
Jam or sauce
Prepare the carrots before start-
ing to mix the pudding. Three
rather large ones usually provide
the correct amount after they are
grated. Use a medium grater. Beat
the eggs and brown sugar until
light and thick. Beat in the oil and
lemon rind. Add the raisins and
grated carrots. Blend the cake meal,
potato starch, salt,. and cinnamon
thoroughly.. Stir into the batter. It
will be quite thick. Spoon into a
well-oiled 1-quart baking dish, and
bake, uncovered, at 350 degs.
one hour. Serve hot with jam or
the following sauce: Beat one egg
and 1/2 cup sifted confectioners'
sugar until light and thick. Season
to taste with grated lemon rind
or a little ground cinnamon. This
amount of Shalet serves five
generously.

The ones which have been
handed down to us are a rich
treasure in our culinary
heritage.
Ideally our Passover menus
should combine these old favor-
ites with the convenient foods
available today. In order to pre-
pare healthful and varied meals
we should by all means take
as much advantage of the splen-
did variety for sale as our bud-
gets allow. But we should _also
include at least one of our trea-
sured traditional recipies each
day. To omit these delicacies
from our table would be to de-
prive our families of much of
the special quality of the holi-
day. Matzos are part of the reli-
gious observance of Passover, its
unique symbol and the one food
all Jews throughout the world
serve at the same time. When we
prepare and serve dishes of mat-
zos and matzo products we em-
phasize the meaning and signi-
ficance of Passover observance
