NOODLE EGGPLANT MOUSSAKA .
23:,(4 Cups cooked medium
noodles
1 medium onion, finely diced
, /,'2 green pepper, finely diced
1 1-lb. eggplant
3 tablespoons vegetable oil
1 8-oz. can tomato sauce
1 well-beaten egg
Salt and pepper to taste
cup grated American
style cheese
Cook the noodles until tender-
crisp and drain thoroughly.
Meanwhile in a large skillet
cook the onion and green pepper
in one tablespoon of the oil until
soft but not brown, about five
minutes. Add to the hot noodles
and season to taste with salt
and pepper. Peel the eggplant
and cut into one-third slices. Add
the remaining oil to the skillet
and cook the eggplant slices in
this until soft. Grease in
8x21/2-inch casserole and place
half the eggplant slices on the
bottom. Cover with half the
noodle mixture. Repeat. Com-
bine the tomato sauce with the
egg and spread evenly over the
surface. Sprinkle the cheese
over this. Bake at 350 deg. F.
for about 35 minutes, until nicely
browned. This recipe serves
5 to 6.
MOUSSAKA WITH CABBAGE
2 tablespoons vegetable oil
1 large onion, finely diced
2 lbs. lean ground beef
2 lbs. shredded cabbage
cup fine dry bread crumbs
?;, cup dark brown sugar
2 tablespoons lemon juice
2 eggs, well beaten
1:2 cup chicken soup or
parve tomato soup
Salt and pepper to taste
